Working with Mistral AI: Practical Workflows, Deployment Options and Data Control

A full day of practical work with the Mistral ecosystem — choosing the right model, building real workflows, and using the deployment options (managed, private cloud, or self-hosted open weights) that keep data under your control.

About this seminar

This full-day session builds on the Introduction to Mistral AI session (MI-A), moving from awareness to capability. By the end of the day, participants have worked through real professional workflows with Mistral’s tools and understand how to deploy them in an organisational setting.

It covers the full ecosystem: Le Chat for everyday tasks; the API for teams integrating AI into their workflows; and the open-weight models that can run locally or on infrastructure you choose. The emphasis throughout is on deployment choice and data control — what each option gives you, and what it costs.

Practical exercises use real scenarios: drafting, analysis, document review and structured data extraction. Participants are encouraged to bring their own documents and use cases.

Relevant to any organisation that needs control over where AI processing happens — public bodies, foreign organisations with European operations, and firms avoiding vendor lock-in. No technical background is required; the Introduction to Mistral AI session (MI-A) is recommended.

You will learn to
  • Select an appropriate Mistral model and deployment option for a given use case
  • Complete a set of practical professional workflows with Mistral's tools independently
  • Explain the data-control and lock-in trade-offs between deployment options
  • Outline the key considerations for deploying Mistral at organisational level
Programme
  • 01The full Mistral ecosystem: Le Chat, API, and open-weight models
  • 02Model selection: when to use a smaller open model vs a larger hosted one
  • 03Practical workflows: drafting, analysis, document review and data extraction
  • 04Deployment options: managed, private cloud, and self-hosted — trade-offs and costs
